Banana Crunch Muffins

One of Leslie’s favorite ways to unwind after a long day is to browse our cook books and her favorite websites for recipes for sweet treats. We found these particular muffins when looking for a take-along breakfast. As you might notice by looking at the ingredients, these muffins are more like a cake than some of the other muffins that we have featured on this site, particularly given their high sugar and butter content and the creaming method utilized to form the batter base. In effort to combat some of the cakeyness of these muffins, we replaced some of the all purpose flour with whole wheat and used old fashion oats in place of the granola. The resulting muffins were still sweet, but were also filling enough to last us through the morning. Another slightly unusual feature of this recipe are the chunks of bananas incorporated into the batter. We had slightly mixed feelings about this aspect of the recipe, but if you are not fond of the texture of cooked fruit in batter, you likely will not like these muffins.

Pumpkin Muffins

Pumpkin Muffins

Continuing our tour of weekly muffins, these pumpkin muffins recently hit our daily commute. As with most muffins, we preferred these pumpkin treasures in the first day or two after they were baked, particularly because they possesed a sweet and crunchy crust that faded away due to moisture even in a tightly sealed container. The muffins themselves were slightly cakey and spongy in texture, making them entirely satisfying to eat on their own when they were cold without the addition of jam or butter or a shot of heat from the microwave, as is sometimes the case with more dense muffins. Overall we enjoyed these muffins and would definitely consider making them again.

Blueberry Buttermilk Pancakes

These pancakes are our effort to replicate a delicious breakfast that we had at a local legendary diner, the Wayside, last spring. Using this recipe from Cooking Light for buttermilk pancakes, we added blueberries and chopped walnuts, creating a filling and tasty meal. If you prefer a light and thin pancake, you will want to stay away from this particular recipe because these pancakes puff high on the griddle and make a thick final product that is perfect for holding all of our addition.

Ultimate Cinnamon Buns

Ultimate Cinnamon Buns

Every Saturday for the past few weeks, we have both woken up craving cinnamon rolls. As you may know, cinnamon buns are not something that you can make from scratch without planning for given the amount of time needed for rising of the dough. After a little planning, we finally got around to making this particular recipe and were blown away. Honestly, these were the best cinnamon buns that either of us have ever had. The aroma that filled the house while these buns cooked was intoxicating and despite that fact that we both were shocked at their giant size, each of us finished an entire cinnamon bun on our own. If you can handle the waiting process and the planning involved, we highly recommend this treat for a weekend in your future.

Note:
We used just half of the frosting that this recipe made and found that plenty for our tastes. Use caution when you are putting on the frosting so that you do not ruin your cinnamon buns with too much sugar.

Banana Bread

Banana Bread

Banana bread is one of life's great wonders. Although different from the recipes that both Corey and I grew up with, we both agree that this recipe produces the best banana bread that we have ever had. Full of toasted nuts and moist, this bread makes us look forward to using those frozen dark brown leftover bananas in our freezer.
